Taken from the front 10 ribs, Jacons Ladder is a very tender selection of ribs. We also take our highly lean trimmed meats from this area giving superior quality.

We trim the outer muscle by following the natural seam.

Once the fat and gristle have been removed, the first 3 and last 3 ribs are removed amd the ribs are then cut along the length.
