LMC (Leg of Mutton Cut)

This cut is taken from the area shown below and is also know as the ‘Thick Rib’ cut. It is available in single muscle and non-single muscle varieties.

LMC Single Muscle

Here we see a single muscle cut that has had any excess fat and discoloured tissue removed.
Here we see the finished single muscle LMC cut vacuum packed and ready for distribution.

LMC Non-Single Muscle

Here we see the non-single muscle having been trimmed to remove any excess fat and discoloured tissue.
The LMC non-single muscle can have a maximum fat thickness of 10mm.
